These flavorful Beef Tacos are a quick and satisfying meal featuring seasoned ground beef simmered in beef broth, nestled in crispy, cheese-filled corn tortillas, and topped with a variety of fresh toppings like sour cream, Pico de Gallo, and shredded lettuce. Ingredients

For the Beef Filling

  • 2 lb ground beef
  • 1 chopped onion
  • 2 TBSP minced garlic
  • 1 tsp salt
  • 1 tsp pepper
  • 1/2 tsp cayenne pepper
  • 4 tsp chili powder
  • 2 tsp cumin
  • 2 tsp dried cilantro
  • 1 1/2 cups beef broth

For the Tacos

  • White corn tortillas
  • 1 tbsp oil
  • Shredded Monterey Jack cheese
  • Taco toppings (sour cream, Pico de Gallo, taco sauce, shredded lettuce)

Instructions

  1. Cook the Beef and Onion: In a skillet over medium-high heat, add the ground beef and chopped onion. Cook until the beef is fully browned and onion is softened. Drain any excess grease from the skillet.
  2. Add Seasonings and Simmer: Stir in the minced garlic, salt, pepper, cayenne, chili powder, cumin, dried cilantro, and beef broth. Bring to a boil, then reduce the heat to low. Cover and let simmer for about 20 minutes, or until the liquid reduces significantly, creating a thick, flavorful taco meat mixture.
  3. Prepare the Tortillas: In a separate skillet, heat 1 tablespoon of oil over medium heat. Lay out a few white corn tortillas in the pan, sprinkle shredded Monterey Jack cheese over one half of each tortilla, then spoon a generous amount of the cooked taco meat on top of the cheese. Fold the tortillas over to enclose the filling.
  4. Cook the Tacos: Cook the folded tortillas on both sides until they are golden brown and crispy, ensuring the cheese melts and the meat is heated through.
  5. Serve: Place the cooked tacos on paper towels to absorb any extra grease. Top with your favorite taco toppings such as sour cream, Pico de Gallo, taco sauce, and shredded lettuce. Serve immediately and enjoy!
