Ingredients

For the Chicken:

  • 1.5 pounds chicken thighs, boneless and skinless
  • 1/2 cup Greek yogurt (or mayonnaise)
  • 1 tablespoon sriracha
  • 1 tablespoon soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon lime juice
  • 1 tablespoon honey

For the Bang Bang Sauce:

  • 1/3 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon rice vinegar
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons chopped fresh mint
  • 1 lime, cut into wedges

Instructions

  1. Cut chicken thighs into bite-sized cubes and place in a large bowl.
  2. In a separate bowl, mix together Greek yogurt (or mayo), sriracha, soy sauce, garlic, lime juice, and honey.

  3. Pour marinade over chicken, mix well, and let it marinate for at least 30 minutes or up to 2 hours.
  4. Soak wooden skewers in water for 20–30 minutes if using.
  5. In another bowl, combine mayonnaise, sweet chili sauce, sriracha, and rice vinegar to create the Bang Bang sauce. Set aside.
  6. Thread the marinated chicken onto the soaked skewers.
  7. Preheat grill or grill pan over medium-high heat.
  8. Grill chicken skewers for 5–6 minutes per side, until nicely charred and cooked through.
  9. Remove skewers from grill and drizzle with Bang Bang sauce.
  10. Garnish with chopped cilantro, mint, and lime wedges before serving.

Notes

  • Use chicken thighs for the juiciest results, but breasts work too.
  • Don’t skip soaking the skewers to prevent burning.
  • Always add the sauce after grilling to keep it from burning on the heat.
