These Baked Salmon Meatballs with Creamy Avocado Sauce are a flavorful and healthy twist on traditional meatballs. The salmon meatballs are moist and tender, while the creamy avocado sauce adds a refreshing and tangy finish.

Ingredients

For the Salmon Meatballs:

  • 1 lb fresh salmon, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 2 tbsp fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • Salt and pepper, to taste

For the Creamy Avocado Sauce:

  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 23 tbsp water to thin, as needed

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine chopped salmon, breadcrumbs, Parmesan cheese, beaten egg, parsley, garlic, lemon zest, salt, and pepper. Mix until well combined. Form into 1.5-inch meatballs and place on the prepared baking sheet.
  3. Bake meatballs for 15-18 minutes, until golden and cooked through.
  4. While baking, combine avocado, Greek yogurt, lime juice, garlic, salt, and pepper in a blender or food processor. Blend until smooth, adding water a tablespoon at a time to reach desired consistency.
  5. Drizzle avocado sauce over warm salmon meatballs or serve on the side.
