Australian Busters are savory cheese biscuits with a crisp, buttery texture and a rich cheddar taste. Enhanced with a hint of cayenne, these biscuits are perfect for snacking or serving alongside soups and salads.

Ingredients

Buttery Cheese Biscuits:

  • 8 tablespoons butter, diced
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 3½ cups shredded cheddar cheese, loosely packed
  • 6 to 7 tablespoons water
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Preheat and Prepare: Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper and lightly spray with nonstick spray.
  2. Mix Dry Ingredients: In a large bowl, mix flour and salt. Add diced butter and rub it into the flour until crumbly.
  3. Blend in Cheese: Add shredded cheddar cheese and mix until evenly incorporated.
  4. Add Cayenne and Water: Stir in water and cayenne pepper with a fork until a dough forms.
  5. Roll and Cut: Roll out dough on a floured surface to ¼-inch thickness. Cut into 3-inch rounds.
  6. Bake: Prick each biscuit with a fork, place on baking sheet, and bake for 15 minutes until golden.
  7. Cool and Serve: Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For an extra crispy finish, bake 1–2 additional minutes.
  • You can substitute sharp cheddar with another flavorful cheese like gouda or pepper jack.
  • Serve with a spicy tomato dip or cream cheese spread for a delicious snack.
