5 medium apples, peeled and diced (1-inch cubes)
1/3 cup packed brown sugar
2 tablespoons granulated sugar
2 teaspoons ground cinnamon
1 teaspoon fresh lemon juice
1 cup water
2 tablespoons cornstarch
For the Chips:
8 (6-inch) flour tortillas
1/3 cup granulated sugar
1 1/2 teaspoons ground cinnamon
Non-stick cooking spray
Instructions
Preparing the Chips – Preheat your oven to 350°F (175°C). Position racks in the upper and lower thirds of the oven to allow for even baking. In a small bowl, whisk together the granulated sugar and cinnamon until uniformly combined. Lay the flour tortillas flat on a clean, dry surface. Lightly coat both sides of each tortilla with non-stick cooking spray. Sprinkle the cinnamon-sugar mixture evenly over both sides of each tortilla, using your fingers to spread it to the edges. Stack the tortillas and cut them into 8 triangular wedges. Arrange the wedges on baking sheets and bake until golden brown and crisp. Allow to cool completely.
Making the Apple Salsa – Whisk together water and cornstarch. In a saucepan, combine apples, sugars, cinnamon, and lemon juice. Cook until apples soften. Add cornstarch mixture and cook until thickened. Remove from heat when desired consistency is reached.
Serving – Transfer the warm apple salsa to a serving bowl. Arrange the cinnamon-sugar chips around the bowl. Garnish the salsa with a sprinkle of cinnamon or a mint leaf. Serve immediately with the chips.
