Ingredients

Chicken:

  • 1 teaspoon ground pepper
  • 12 tablespoons olive oil

Bruschetta:

  • 34 medium ripe tomatoes (about 1 lb), cored, seeded, and chopped to a ½” dice
  • 1 teaspoon kosher salt
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 2 tablespoons thinly sliced basil leaves
  • Ground pepper to taste
  • Balsamic glaze to taste, optional

Instructions

  1. Start the bruschetta: Combine the chopped tomatoes with salt and garlic in a mixing bowl; mix until well combined, then let sit while the chicken cooks.
  2. Prepare the chicken: Pound the chicken breasts to an even thickness. Combine the seasonings and coat the chicken with olive oil and seasoning.
